I found a recipe for the Queso sauce that is on the Queso burrito at Qdoba. Amazing. And, I know what’s going into this, so I feel much better pouring it over my burritos!! This recipe made a huge amount, so I think I’ll cut it at least in half next time I make it. But I’m thinking of using it for the sauce in my next pan of enchiladas. I’ll let you know how that goes.
1 1/4 lb block of White American Cheese
1/4 cup diced green chiles
2 pickled jalapenos, chopped
1 oz pickled jalapeno juice
2/3 cup whole milk
1/2 cup cold water
Toss all ingredients into a large microwave-safe bowl. Microwave on high for 5 minutes, stopping to stir after every minute. The mixture might seem watery during the first few stirs, but should come together as a nice runny dip after all the cheese is melted.
Serve immediately as a dip with tortilla chips or as a sauce over your favorite Mexican dish.
A few adjustments I made were: 1) we didn’t have green chiles, so I left those out, and it was still super spicy and delicious! and 2) I did this in a pan over the stove, since we don’t have a microwave and because I think all things taste better on the stove.
So there you go! We barely got through half of that cup of the sauce, it is that rich! I do believe this will become a staple to our Mexican Fiesta nights.
I was given an amazing sewing machine by my generous mother-in-law, and have been using it not nearly as much as I want to. I started an advent calendar with my mother, which will I’m sure take up more posts, as I work on it. Yesterday though, I did a tiny little project I’ve been wanting to tackle for a while. Some of you may remember my amazing blue fuzzy pillow that I’ve had since who knows how long. It looks like this:
I love this pillow. Alas alac, it does not fit with any of our other colors. Instead of donating it, though, I recycled it! This is how:
A pillow slip cover! Those exist, right? Cheap, cute fabric turned this cookie monster pillow into a $5 throw pillow that actually matches something. And here’s how great it turned out:
Can’t even tell it has blue fuzzy insides, can you? I’m very proud. And, if I ever have a Sesame Street themed room (God forbid…) I’ll rip those seams up and have the perfect inspiration.
On a completely different note, Craigslist is awesome!! We sold two items and made enough to go buy our (unborn) puppy some goodies:
Paul and I read a lot. We read a lot about health, and food, and the land, and good choices. It inspires us to take better care of our bodies and the earth. And so, we read more about it. Unfortunately, reading doesn’t do a whole lot except fill your brains with goodness. It can be kind of overwhelming, in fact. We decided we needed to start acting on all of these readings, and do something. But where to begin?
A few things we came up with:
We decided we will have fruits and veggies on hand at all times, and eat at least one of each every day. Eating an apple as dessert makes us feel so much better! Although, I may be making a peach cobbler here soon!
We’ve been taking walks almost every night after dinner (that I’m not working). This has been wonderful as our backyard is Riverfront Park! The river is exceptionally torrential and amazing to watch. I can’t wait for our puppy to come- even more reason to get outside!
Something that I’m proud to say we’ve done almost since the day we were married is our meat choices. We try and eat meat only twice or so a week, and when we do, we like to make sure it’s local meat. It really is that much better than big farm meat, and therefore worth the extra money.
These all are very, very small changes, but we know they are steps in the right direction to good health and a better environment.
What choices are you making?
It’s May! My favorite month…and not just because its my birthday month. Spring is springing and new life begins! And speaking of new life (no, I’m not pregnant), we are now in our new apartment! I don’t think I can fully describe how much better we feel just being in this apartment. It’s cleaner, brighter, bigger, cuter, and all around amazing. I’m thankful that Paul and I can truly appreciate the little things about this apartment. The dishwasher, the hot water tank that belongs only to us, the clean walls, the hole-less carpet, the parking lot. Really I feel like every day we find something new that we didn’t have before. Of course, it’s not perfect. We are really bummed that we don’t have a balcony or porch to have a garden. But we are definitely okay with the trade-off.
On another note, we also just got back from a week in Phoenix. It was so wonderful to be down there. The weather was perfect, the company was great, and we were spoiled rotten!

We went to the zoo, a Diamondbacks baseball game, shopping, a motorcycle ride, and laid by the pool. We got to spend some great time with my family, and it was really special, because it was the first time Paul really got to know my Dad, Leah, Craig, & Claire. Thanks guys!!
So now we’re back, full swing, in a new apartment, refreshed from vacation and ready for summer!
